Chinese Chicken with Cashews

Chinese Chicken With Cashews
Stir-fried, crisp chicken with cashews is a popular Chinese-style dish that's easy and quick to prepare.

INGREDIENTS
• 2 tablespoons low-salt soy sauce
• 2 tablespoons rice vinegar
• 2 tablespoons dry sherry
• 1 tablespoon chopped fresh ginger (or 1 teaspoon ground ginger)
• 2 medium garlic cloves, crushed
• ¾ pound boneless, skinless chicken breast, cut into ½ -inch pieces
• 2 teaspoons toasted sesame oil • ¼ cup cashews
• ½ medium red onion, sliced (1 cup)
• 1 medium red bell pepper, sliced (1 cup)
• 2 teaspoons corn starch
• Salt and freshly ground black pepper
• 2 scallions, sliced

DIRECTIONS
Mix soy sauce, vinegar, sherry, ginger and garlic in a small bowl. Add chicken and set aside.

Heat a wok or skillet over high heat and add sesame oil. Drain chicken, reserving liquid. Add chicken and cashews to wok; stir-fry 2 minutes and remove to a plate. Stir-fry onion and red bell pepper 2 minutes. Mix the cornstarch with 1 tablespoon water and add to reserved marinade. Add marinade, chicken and cashews to the wok; stir-fry 2 minutes. Remove from heat. Add salt and pepper to taste. Top with scallions and serve with rice. Makes 2 servings.
